I love to try new recipes but I don’t always have the patiences to try something new when the recipes are tedious and have so MANY steps! What if it doesn’t turn out? Has no flavor?? Or to simply put, a Pinterest FAIL! It happens to the best of us but this one, was so easy and good, I had to share!
The original recipe involved making cornbread from scratch (which you can totally do, comment your favorite cornbread recipe below!) but I used boxed Jiffy corn muffin mix. I’m thinking I could have even used two boxes but I only had one in the cupboard.
- 1 or 2 boxes of Jiffy Corn Muffin Mix
- 1/2 pint or 1 pint of fresh or frozen blueberries
- 1/3 cup of sugar
- 1 tsp. of cinnamon
Follow the directions on the corn muffin mix. Once the ingredients are mixed for the cornbread, stir in your blueberries. Grease up your skillet or pan and pour in mixture. I topped it off with a few extra blueberries and sprinkled the sugar/cinnamon mixture on top. If you do a double batch, you could pour in half the batter, sprinkle the sugar/cinnamon mixture, pour the rest of the batter and top with the sugar/cinnamon mixture again.
Preheat oven to 400 degrees
Bake for 20 minutes or until edges are slightly brown.
